Thousands of agency workers will be entitled to greater employment rights following a tribunal that ruled in favour of a group of Polish workers in the food processing industry, saying they should be considered employees rather than self-employed.The workers, who worked at Welsh Country Foods in Winsford in Cheshire, were evicted from their accommodation following dismissal in 2005.The case, Kalwak & others v Consistent, has implications for thousands of agency workers and the agencies who employ them, some of whom class their workers as self-employed, avoiding paying holiday pay, sick pay or pension contributions.The case was brought by union Unite, which was formed on 1 May 2007 from a merger of unions amicus and the T&G.
Sugarcraft students from Brooklands College competed in a bi-annual catering exhibition at ExCeL in London’s Docklands and achieved great success.Hyang Soon Yoon, who lives in Walton, won three gold medals and first-in-class for her wedding cake, decorated with sugarpaste and pastillage miniature. Her fellow students, Maki Kato and Yukiko Mori from Weybridge, both won silver medals for their wedding and celebration cakes.The team of nine sugarcrafters from the college won four golds, eight silvers, one bronze, one merit and a first-in-class.Lecturer Jane Hatton said: “The students are really looking forward to their next competition in three weeks time. There is an air of real optimism among them.”
W ith increasing consumer awareness about what they are eating, the current trend is the use of natural fresh ingredients. It’s easier for small craft bakers who sell locally to use more fresh fruit pieces in their toppings, as many have a relatively short shelf-life and are made for immediate consumption. “The biggest trend, though, is that people want premium products and they are actually willing to pay for them,” says Stuart Allan, operations and development director of Indulgence Patisserie.The firm, based in Colchester, Essex, supplies premium private-label and branded desserts for the retail, foodservice and travel catering markets. It sources the fruit for its toppings from a supplier based in Kent.When finding a supplier these days, it’s important to the firm that everything is clean-label, and “not a lot of companies do that”, says Allan. Consumers don’t want additives and preservatives in their desserts, so products have a shorter shelf-life and it is therefore important to get them out quickly, he adds.Similarly The Real Patisserie – a relatively small business with only two outlets in Brighton and Hove, uses a wide variety of fruits for the toppings of its fresh cakes and tarts, which are made on the premises. The majority of the fruit used, including apples, strawberries, lemons and kiwis, is fresh and sourced from Adams Wholesale Ltd, a supplier based in Hove.It is important to the company to source locally where possible – not to mention the fact that it “makes sense” in terms of cost, delivery and storage – and it has been using the same supplier for over 10 years. One of the downsides to sourcing your products locally would be that there may be some fruits that are harder to get hold of, although The Real Patisserie only uses a couple of tinned products – pears and apricots – and only the raspberries come frozen.While the demand for seasonal produce, such as strawberries, remains constant, British fruit farmers cannot rely on the nation’s changeable weather for a decent crop each year, so larger suppliers offer more consistent supply.Unifine Food and Bake Ingredients, for example, produces a number of different fruit-based toppings for use in or on their products, including liquid gels that can be poured onto mousse cakes, fruit fillings for buttercream cakes and pies and concentrated fruit pieces. The company also makes use of a lot of fresh fruit produce suspended in sauces.”Our apple pie is made using Jonagold apples, which have a crisp, sweet flavour and are grown down the road from our factory in Belgium,” says Unifine’s sales and marketing director, Simon Solway, arguing that consumers are often ambivalent about where the product comes from.”You can find certain fruit, such as strawberries, in supermarkets all year round, and even though you might look at the packet and see it comes from Morocco, it doesn’t weaken demand,” says Solway. Norman Olley, a well-known baker and one of Rick Stein’s food heroes, has closed his business in Dereham, Norfolk, after falling sales left him with no choice. The self-proclaimed “campaigning baker” told British Baker he blamed the increasing dominance of the supermarkets, for the falling number of consumers coming to buy bread from his shop. “I’ve been trying to fight the big boys and everything they represent… but now they’ve finally got me,” he said.The North Elmham bakery, which Olley had run for 34 years, shut its doors on Saturday 16 January, after he had run through his finances the day before and realised he didn’t know where the money was going to come from to pay the bills and his staff their wages. “I thought it best to walk away now, rather than be pushed,” he said.The business, which employed eight people, comprised a shop in Dereham and a stall at Norwich market. The bakery also supplied between 30 and 40 wholesale clients in the local area, including schools.Sales had fallen over the past year, explained Olley. “A year ago I was taking around £1,500 a week on the market stall, but this has dropped to £500, and the business had been turning over around £5,000 a week, but this had dropped by around £1,200 a week on average.” Olley said he’d noticed falling customer numbers over the past five years as people chose to shop at the supermarket for their bread instead. Looking back, he said he probably should have closed about five years ago, “but being a baker you run business from your heart rather than your head”.
